Scampi Baked Cod Pockets Recipe

Ingredients:

  • 8 oz fresh cod (yield 7 oz cooked)
  • ½ cup red bell pepper, sliced
  • ½ cup green bell pepper, sliced
  • ½ cup , portabella mushrooms, sliced
  • 1 garlic clove, minced
  • 2 tsp lemon juice
  • 2 tbsp light, trans-free margarine, melted
  • 1 tsp dried parsley

Directions

Preheat oven to 350 F.

In a small bowl, combine garlic, lemon juice, butter and parsley to create a sauce.

Take a 12”x12” aluminum foil sheet and fold it in half to create a crease.

Place cod and veggies on the top half of the aluminum foil sheet.

Drizzle sauce mixture over fish and veggies.

Fold over the bottom half of foil to create a pocket.

Fold edges up on all open sides to create a seal.

Place pocket in lower rack of oven and bake for 15-20 minutes, until cod flakes.
