Healthy Holidays: Broccoli and Cheese Casserole

FALL into the Flavors of the Season with this healthy dinner option!

Recipe by the Medifast California Roseville Staff

Ingredients:

1/2 cup egg beaters
2 cups broccoli
1 cup cottage cheese
1/2 tsp garlic powder
1/2 tsp sweet basil
1/4 tsp salt
1 tbsp grated Parmesan cheese
1 cup shredded reduced fat 2% Cheddar cheese, divided
1 tbsp light butter

Instructions:

Preheat oven to 350 degrees.

Combine all ingredients in a bowl except Parmesan cheese and 1/2 cup shredded Cheddar cheese.

“PAM” an 8×8 baking dish and pour the broccoli mixture into the dish.

Bake for 40 min.

Sprinkle Cheddar cheese and Parmesan cheese on top.

Bake an additional 20 minutes.

2 Lean & Green meals
