Mix ground meat with egg white, garlic powder and pepper.
Form into patty and set to the side.
Turn broiler on to high.
Mix bell pepper and tomato. Place on foil square on top of cookie sheet.
Brush eggplant slices with olive oil. Place eggplant slices on opposite side of cookie sheet.
Broil for 25 minutes. 10 – 12 minutes in, remove eggplant and continue to broil pepper and tomatoes for remaining 15 minutes, making sure they do not burn.
Grill patty in a cast-iron over medium-high heat until well-done. Set aside.
Add bell peppers, tomatoes, vinegar and oregano into blender. Blend until applesauce consistency.
Spread puree over 1 eggplant slice. On remaining eggplant slice, top with lettuce, patty, then cheese, topping it off with eggplant slice with puree (face down).
