Eggplant Buffalo Burger with Radish Chips from our Lean and Green Cook-Off

Ingredients:

7oz Bison Meat
1 Medium Eggplant
2 TBSP Olive Oil
1 tsp Garlic powder or favorite seasoning
Salt & Pepper
1 Large tomato
6-10 Medium Radishes
½ Cup of Spinach leafs

Instructions:

Burger:

Add your condiment seasonings to bison meat.

Form two patties from raw Bison & grill over medium heat 5-7 min. each side. Keep in mind due to the lower fat content in Buffalo it cooks faster than beef and is best served medium rare.

Slice eggplant into 4 medium pieces to use as the bread for both burgers, slightly grilling with olive oil before putting together.

Slice tomato as condiment for your burger, along with spinach leaves.

Radish Chips:

Slice radishes into very thin chips and spread on a cookie sheet that has been sprayed with non-stick cooking spray.

Lightly mist radish slices with cooking spray and then sprinkle with salt and pepper. (If using other seasonings now is the time to add them).

Bake for 10 minutes, flip, and bake for another 5-10 minutes or until crisp. Time may vary so watch these after flipping.
