Kale, Strawberry & Avocado Salad with Lemon Poppy Seed Dressing
Start out with this light spring salad that just happens include three weight loss superfoods; kale, strawberries, and avocado all have properties that make them ideal for a healthy diet.

Ingredients:

(For the salad)

4 cups chopped kale, stems removed
Pinch of sea salt
1 cup sliced strawberries
1 avocado, chopped
1/3 cup sliced almonds
1/4 cup feta cheese

(For the Lemon Poppy Seed Dressing)

2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon honey
1/2 teaspoon poppy seeds
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper

Directions

Put the kale in a large bowl. Sprinkle a pinch of sea salt over the kale and massage the leaves until the leaves are darker in color and tender.

Add the strawberries, avocado, almonds, and feta cheese. Toss gently.

In a small jar, combine the olive oil, lemon juice, honey, poppy seeds, salt, and pepper. Shake until mixed well.

Pour the dressing over the salad and toss to coat. Serve.

Lemon-Oregano Lamb Chops
Lamb is a traditional Easter food and there’s no need to skip it with this simple recipe that is heavy in taste, but light in calories.

Ingredients

2 tablespoons fresh lemon juice
1 teaspoon extra-virgin olive oil
1/2 teaspoon dried oregano
1 garlic clove, minced
8 (4-ounce) lamb loin chops, trimmed
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Cooking spray

Directions

Combine lemon juice, olive oil, oregano, and garlic in a large zip-top plastic bag. Add lamb to bag, turning to coat. Seal and marinate at room temperature 15 minutes, turning occasionally.

Heat a grill pan over medium-high heat. Remove lamb from marinade; discard marinade. Sprinkle lamb evenly with salt and pepper. Coat pan with cooking spray. Add lamb to pan, and cook for 3 minutes on each side or until desired degree of doneness.

Ingredients

(For the cake)

1/4 cup spelt flour (or white flour)
1/2 teaspoon cinnamon
1/8 teaspoon pumpkin pie spice (optional)
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 teaspoon ener-g OR 2 teaspoons flaxmeal (You can omit this entirely, but your cake won’t rise as well.)
1.5 tablespoons xylitol OR brown sugar
1 packet NuNaturals stevia OR 1 more tablespoon sugar
1/3 cup canned carrots, drained OR steamed carrots, peeled
1 tablespoon milk of choice
1 tablespoon oil OR more milk of choice
1/4 teaspoon pure vanilla extract

(For the frosting)

1/4 cup PLUS 2 tablespoons cream cheese spread
1/2 teaspoon pure vanilla extract
3-4 tablespoons powdered sugar
1/4 cup Mori-Nu silken-firm tofu OR more cream cheese spread Up to 2 tablespoons milk of choice, as needed for desired thickness

Directions

In a small bowl, mix dry ingredients (not carrots). Mix all wet ingredients and blend. (If you don’t have a blender, mash the carrots with a fork before adding to mixture.) Then mix dry into wet and stir.

Pour into a small greased dish or a mug. If using the microwave, cook for 1 minute 20 seconds (approximately; depending on your microwave wattage). Or you can cook in the oven at 350F for 15 minutes. Let cool before trying to remove from dish.

To make frosting, blend ingredients together in a small food processor. Frost cake. Enjoy.
